Wedding venue food stationWe hosted an engagement party for 200 people at The Avenue. It was laid back and informal. We added an interactive tostadas station. It was a great success. People kept coming back for seconds. The Avenue is one of the best inexpensive banquet halls in Toronto.

The best way to make tostadas is to use the following recipe:
1. Ingredients-flour tortillas
1/2 tbsp. oil
1/4 tsp. salt
2.Method: Set your oven to 400 degrees fahrenheit. Spread oil evenly on the tortilla with a brush. Cut the tortilla into as many triangular shapes as possible.  If you can cut out 8 triangles, you are doing well. Place oil side up on a baking sheet. Bake until crisp. Five to ten minutes should do the job. Let it cool

The above recipe creates a blank canvas. You can now add your favourite ingredients. At our engagement party the theme was the beach. We created a variety of seafood tostadas

Mixta Tostada: Combination of ceviche, octopus, shrimp. crab meat, pineapple, red onion, spicy tomato and lemon juice.

Ceviche de Pescado Tostada: Blend of red snapper fish, cucumber, tomato, red onion, parsley, serrano chile and clamato.

Callo de Hacha Tostada: Variety of scallops, octopus with lemon juice, cucumber, red onion, cilantro, avocado, and chipotle sauce.

Salmon Tostada: Salmon marinated with dill and vodka. tuna, lime slices, pink salt almonds, arugula, apples and pine nuts.

The trick to making good ceviche is to use the right combination of lime, lemon and orange juice. The marination time is critical to the process. You take the correct proportion of lime, lemon and orange juice and add it to your choice of fish. You cover it and let it stand in the fridge for a minimum of three hours.

Our party concentrated on fish because the theme chosen, however you can add beef, chicken, veal, pork, or any combination. Your choices are limitless. The end product is rich in flavour and taste.
